TASTE SOMETHING DIFFERENT
HAND-CRAFTED CYSER & CIDER IN THE HILL COUNTRY
Every pour is handcrafted, every batch is made right here on-site, and every tasting is guided so you get exactly what you love (even if you don’t know what that is yet).
WHAT ELSE YOU CAN EXPECT…
THE SPACE & VIBE
We’ve got plenty of room to spread out — inside the tasting room and outside in the shady grove. Grab a table, bring your people, and settle in.
Kid-friendly. Dogs welcome on leash (heads up: we have a few friendly off-leash ranch dogs who live here).
No reservations needed.
THE FOOD
We share a space with Silver Dollar Winery, giving you access to award-winning cysers, ciders, wines, and a full Italian Bistro menu served all day.
Think pizzas (yes, gluten-free crust too), pastas, salads, sandwiches, and desserts.
Bring your appetite. We’ve got you covered.
CUSTOMIZED TASTINGS
We build tastings around you — your palate, your curiosity, your comfort level.
What to expect:
- A guided overview of our cysers and ciders
- A customized flight of five flavors
- Full pours available to enjoy after you find your favorites
- A chance to bring home bottles not available in stores

Every new batch — every single one — is released in the tasting room first.

JUST LOOK FOR THE BUS!
Visit us with Silver Dollar Winery and the Italian Bistro along the 290 Wine Trail — a shared space where cider, wine, food, and Hill Country charm all meet. Come taste through our lineup and enjoy the expansive grove.
THE STORY OF WINSTON
Winston — our iconic red double-decker bus — rolled onto the property one spring morning in 2018. The bus itself was free, but hauling it here cost $700, which felt about right for a 1951 London Transport veteran retiring in the Texas Hill Country.
Built in 1951, Winston spent nearly two decades carrying London commuters before moving into county service and eventually being repainted red for one last run. After retiring from the fleet in 1975, he made his way to Scotland, then somehow to Austin, where he spent years working the food-truck scene as a Fish & Chips counter and an unbeatable selfie backdrop.
By the time Winston reached Hye, he had stories layered into his paint. We briefly entertained ideas — a bar inside, rooftop seating, maybe even getting him road-ready again — but ultimately decided he’d earned a peaceful retirement. Today, Winston stands proudly on our grounds as the most photographed “member” of the Hye Cider team.
Visitors love him. And if you’ve ever tried to move a double-decker bus with a tractor and a couple of determined friends, you’ll appreciate that Winston can still roll — slowly, but with dignity.
Now he serves as our landmark, our unofficial mascot, and the easiest way to find us on the 290 Wine Trail.
Every double-decker deserves a good retirement. We’re glad Winston chose ours.
